Green tea undergoes less processing than oolong or black tea. After picking, the leaves are spread out and briefly dried. Then they are heated, either by pan firing or steaming, to stop the oxidation process. The leaves are then rolled into shape, fired again and sorted. Steep in water that is just brought to a steam.
If you have never tried green teas because you feel they are bitter or tasteless, you have gotten your lips around a tea that was either over steeped, or the water used was too hot. When made properly, green tea should taist sweet and delicious.
